- 1 brown onion, chopped
- 500 grams boned lamb meat
- 1 tbsp sunflower oil
- 3 garlic cloves
- 1 tsp cumin seeds
- 2 whole cloves
- 3 Juniper berries
- 1 cinnamon stick
- 1 tbsp tomato paste
- 1-liter vegetable stock
- 200 grams pearled barley
- 3 ripe tomatoes, diced
- 1 tsp sea salt
- ⅓ cup fresh cilantro

- Sear the Lamb
تم نسخ الرابطIn a pressure cooker on medium heat, add the sunflower oil and sear your lamb until golden from all sides. Remove the lamb and set aside.
- Soup Base - First Step
تم نسخ الرابطIn the same pressure cooked, cook the onions for 10 minutes or until translucent. Then add the crushed garlic, cumin seeds, clover, juniper berries and cinnamon. Let it cook for two minutes then add the tomato paste and mix well.
- Soup Base - Second Step
تم نسخ الرابطAdd back the meat along with the vegetable stock and pearled barley. When it starts bubbling, add in the diced tomatoes and salt to taste. When it starts boiling, secure the pressure cooker's lid and cook for 30 minutes.
- Serve
تم نسخ الرابطLet your pressure cooker release pressure before removing the lid - and be careful! Slowly remove its lid and serve your soup garnished with fresh chopped cilantro and flatbread on the side.
