  • Ingredients of Shish Taouk

Marinade

1 cup plain Greek yogurt
2 tbsp olive oil
2 tsp paprika
½ tsp cumin
⅛ tsp cinnamon
½ tsp crushed red pepper flakes
1 lemon zest
2 tbsp lemon juice
1¾ tsp salt
½ tsp freshly ground black pepper
5 garlic cloves, minced

Chicken

1 to 1.4 kg boneless, skinless chicken thighs
1 large red onion, cut into 2.5 cm chunks.
Vegetable oil for greasing the grill

  1. Prepare the Marinade

    Start by mixing yogurt, olive oil, paprika, cumin, cinnamon, red pepper flakes, lemon zest, lemon juice, salt, pepper, and garlic in a bowl.
  2. Prep the Chicken

    Then, trim the excess fat from the chicken thighs and cut them into 4 cm pieces.
  3. Assemble the Shish Taouk

    Thread the chicken and red onion chunks onto skewers, folding any long pieces. Leave space between each skewer to cook evenly. This recipe will yield about 6–8 skewers.
  4. Line a baking sheet with foil for easy cleanup.

  5. Marinate

    Brush the marinade over the Shish Taouk, coating well. Cover and refrigerate for at least 8 hours or overnight for the best flavor.
  6. Grill the Kebabs

    Preheat the grill to medium-high heat. Grease the grates by rubbing them with oil using tongs and a paper towel. Grill the Shish Taouk for 13–15 minutes, turning occasionally, until golden and cooked through. Transfer to a platter and enjoy!
