Rice Paper Noodles

3 tbsp vegetable oil
1 tbsp red chili flakes crushed
1 small garlic clove finely minced
2 tbsp green onions finely chopped
1 tbsp sesame seeds
1 tsp sugar
2 tbsp soy sauce
3 tbsp water
9 sheets of rice paper
Fresh cilantro for garnish
1 small cucumber thinly sliced

  1. Make the Sauce

    Heat vegetable oil until hot but not smoking. Pour over chili flakes, garlic, green onions, sesame seeds, and sugar in a heatproof bowl. Stir in soy sauce and water, then set aside.
  2. Prepare the Noodles

    Lightly oil a cutting board and soften 2 to 3 rice paper sheets in cold water. Stack and oil the top then cut into 2.5 cm strips. Toss in sauce to prevent sticking and repeat with remaining sheets.
  3. Garnish & Serve

    Lastly, top with fresh cilantro and cucumber slices. Serve immediately for the best texture.
