Salad

1 cucumber, peeled
2 carrots, peeled
Dressing
2 tbsp sesame oil
1 tbsp rice vinegar
1 tbsp soy sauce
1 tsp maple syrup
1 tsp minced garlic
½ tsp fresh ginger, finely chopped
1 tsp of chili paste
Roasted sesame seeds and green onion

  1. Make the Dressing

    In a medium bowl, mix sesame oil, rice vinegar, soy sauce, maple syrup, minced garlic, ginger, and chili paste.
  2. Prepare the Salad

    Using a vegetable peeler, shave your cucumber and carrots into long ribbons. Add the dressing, toss together and season with roasted sesame seeds and chopped green onions.
