Queso Dip

2 ½ cups cheddar cheese, freshly shredded
1 tbsp cornstarch
½ tbsp unsalted butter
1 clove garlic, finely minced
¼ small white onion, finely chopped
1 can (375 grams) evaporated milk
1 small tomato, finely diced
¼ tsp onion powder
¼ tsp garlic powder
¼ tsp cumin
1 can (113 grams) chopped green chiles
¼ cup cilantro, finely chopped
3 tbsp milk, any type (or more to loosen the dip)

  1. Toss the Cheese

    In a bowl, mix the cheese with cornflour and toss until well coated. This helps thicken the dip and keep it smooth.
  2. Melt the Butter

    In a large saucepan or small pot, melt the butter over medium heat.
  3. Sauté the Aromatics

    Add the garlic and onion to the melted butter. Cook gently for about 3 minutes until the onion turns translucent but does not brown. Add the tomatoes (including juices) and cook for another 2 minutes until slightly softened.
  4. Add Milk, Cheese, and Spices

    Pour in the evaporated milk and add the cheese. Stir well, then mix in the chiles and spices.
  5. Melt the Cheese

    Keep stirring until the cheese fully melts and turns into a silky, smooth sauce.
  6. Season and Adjust Consistency

    Add salt to taste, depending on how salty your cheese is. Stir in coriander for extra flavor. If the dip is too thick, add 2 tablespoons of milk or water. It will thicken as it cools, so you can adjust with more liquid later.
  7. Serve or Store

    Serve warm or at room temperature—it will stay soft and scoopable even as it cools. Store leftovers in the refrigerator for up to 5 days or freeze for up to 3 months.
  8. After refrigeration, the dip will firm up like a jarred cheese spread. To reheat, microwave and add a little milk to reach your desired consistency. If it becomes too thin, heat it on the stove until it thickens again.
