Qamar Al Deen

400 grams Qamar Al Deen (dried apricots leather)
3 ½ cups boiling water
4 tbsp cornstarch
2 tbsp sugar

Milk Pudding

4 cups milk
5 tbsp cornstarch
4 tbsp sugar
1 can of thick cream
1 tbsp rose water
Crushed pistachios to garnish

  1. Soak the Dried Apricot Leather

    Begin by cutting the Qamar Al Deen into small pieces and placing them in a bowl. Pour boiling water over the pieces and let them soak for at least 1 hour. For a smoother texture, you can soak them overnight, allowing the apricot leather to soften completely.
  2. Blend and Prepare the Apricot Mixture

    Once softened, blend the Qamar Al Deen until completely smooth. Strain the mixture to remove any lumps, ensuring a silky texture. Add cornstarch and sugar, stirring well until fully combined.
  3. Cook the Apricot Pudding

    Transfer the mixture to a saucepan over medium heat, stirring continuously. Once the mixture begins to bubble and thickens to a pudding-like consistency, remove it from the heat.
  4. Assemble the First Layer

    Take six serving cups or bowls and pour the Qamar Al Deen pudding into each, filling one-third of the way. Set aside and allow this layer to cool completely. Cover the remaining pudding in the saucepan for later use.
  5. Prepare the Milk Pudding

    In a separate saucepan, mix cold milk, cornstarch, and sugar until the cornstarch is fully dissolved. Place the saucepan over medium heat and stir continuously until the mixture thickens and starts to bubble. Remove from heat and add rose water, stirring well to infuse the flavor.
  6. Assemble the Second Layer

    Pour the milk pudding over the cooled Qamar Al Deen layer, filling another third of the serving cups. Allow this layer to cool completely before adding the final layer.
  7. Finish with the Last Layer

    Reheat the remaining Qamar Al Deen pudding over low heat until slightly runny. Pour this final layer on top of the milk pudding in each serving cup.
  8. Garnish and Chill

    Sprinkle crushed pistachios over the top for a delightful crunch. Place the puddings in the fridge for 3 to 4 hours to fully set. Serve chilled and enjoy this creamy, fruity delight!
