Ramadan Recipe: Pumpkin Halvah

Emirati pumpkin halvah is a traditional dessert that combines pumpkin with a rich, nutty texture, often served during festive occasions like Ramadan Iftar and Eid. Made by cooking mashed pumpkin with sugar, ghee, and sometimes nuts like almonds or pistachios, this sweet treat offers a delightful balance of flavors. The dessert’s consistency can range from slightly firm to soft and creamy, depending on the recipe. It is typically flavored with cardamom and sometimes rose water, which enhances its aromatic qualities. This dish is a beloved part of Emirati cuisine, celebrated for its simplicity, warmth, and rich, comforting taste

  • Ingredients of Pumpkin Halvah

Pumpkin Porridge

900 grams cubed yellow pumpkin
3 ½ cups full fat milk
¾ sugar
½ light brown sugar
½ cup almond flower
¾ cup unsalted butter
1 tsp rosewater
½ tsp cardamom
½ salt
2 cups powdered milk
1 cup roughly chopped almonds
1 cup raisins
2 tbsp ghee
  • Method & Directions of Pumpkin Halvah

  1. Blend the Pumpkins

    In a blender, mix the pumpkins and the milk until smooth. Pour into a pot over medium-high heat and let boil stirring often. When thickened, reduce heat and let simmer for 1 hour stirring occasionally.
  2. Season the Pumpkin Puree

    When the texture is thick and smooth, add in the sugar, light brown sugar, almond flour, butter, rosewater, cardamom and salt. Let it simmer for 5 more minutes.
  3. Prepare the Almonds

    In another pan, roast your almonds with some butter until slightly golden. Add in the raisins and mix well.
  4. Assemble Your Halvah

    Remove your pumpkin halvah mix from the heat and using a hand blender mix in the powdered milk. Add ¾ cup of your almonds and raisins - leaving some to garnish. Pour onto a serving plate, garnish, and enjoy!
  5. You can also use cashews with almonds or instead of them. Also, you can use green or black raisins.
