A Basque Cheesecake is a crustless one, originally from French cuisine. It is high in protein as it is super easy to make. This autumnal dessert is a great addition to your Ramadan nights with a cup of Arabic coffee.

Pumpkin Basque Cheesecake

4 eggs
1 tsp vanilla extract
250 grams of pumpkin puree
200 grams cream cheese
½ condensed milk
1 ½ tbsp cornstarch
150 grams of heavy cream
2 tbsp pumpkin spice

  1. Preheat your Oven

    Before making your cheesecake batter, preheat your oven to 200 degrees Celsius. Grab a Pyrex or any oven tray and layer it with a piece of parchment paper.
  2. Make Your Cheesecake Batter

    In a large mixing bowl, whisk the eggs and vanilla until fluffy. Then add in the pumpkin puree, cream cheese, condensed milk, cornstarch, pumpkin spice and heavy cream. Taste the batter and add some granulated sugar if desired. The batter is supposed to be runny, so don’t worry.
  3. Adding in a pinch of salt will make the flavors pop out.

    Pour the mixture into the Pyrex and tap it on the counter to make sure it evens out. Bake at 200 Celsius degrees for 40 minutes. Test with a wooden toothpick, if it comes out clean you are good to go.
  5. Chill and Serve

    Take the pumpkin Basque cheesecake out of the oven and let it cool down. Then chill it for 30 minutes or so. Serve with whipped cream or a drizzle of caramel sauce.
