Pickled Onions

1 large red onion, thinly sliced
½ cup apple cider vinegar
1 tbsp granulated sugar
1 ½ tsp salt
1 cup hot water

  1. Slice the Onions

    Start by thinly slicing the red onion using a mandoline or a sharp knife.
  2. Pack the Jar

    Place the sliced onions into a jar. You can use a bowl too, but a jar makes storage easier.
  3. Prepare the Liquid Brine

    In a measuring cup, mix apple cider vinegar, salt, sugar, and warm water - not boiling water - and stir well until the sugar and salt dissolve.
  4. Pour and Soak

    Now, pour the brine over the onions, ensuring they are fully soaking in it. Let them sit for an hour or more.
  5. Store and Enjoy

    After an hour, cover the jar and refrigerate. These delicious, pickled onions will stay fresh for up to three weeks.
