- 680 grams cubed chicken breasts, boneless and skinless
- 2 tbsp olive oil
- 4 mashed garlic cloves
- ¾ cup sundried tomatoes
- 2 tbsp Italian seasoning
- 2 tbsp paprika
- ½ tbsp salt
- 1 tsp black pepper
- 1 cup orzo
- 2 ¾ cups chicken broth
- ¾ cup full-fat coconut milk
- 2 cups fresh spinach
- ¾ cup freshly grated parmesan cheese

- Start with the Chicken
تم نسخ الرابطIn a hot and oiled nonstick pan, cook your chicken for 4 minutes on medium heat stirring occasionally. Keep an eye on the edges as you need them to be golden-brown
- Add the Seasoning
تم نسخ الرابطAdd the sundried tomatoes, garlic, Italian seasoning, paprika, salt and black pepper. Stir well and cook for another 4 minutes
- Time for the Orzo
تم نسخ الرابطAdd in your cup of orzo and sauté for a minute with the chicken and seasonings. Then, add in the chicken broth. When it all bubbles, reduce the heat, cover, and cook for 12 minutes.
- Last Step
تم نسخ الرابطOnce your orzo is cooked, add the coconut milk and spinach and cook for another minute. Serve your one-pan chicken orzo with grated parmesan on top.
If your sundried tomatoes are soaking in oil, strain them well beforehand. Otherwise, you will have an oily orzo dish.
Stir occasionally to prevent anything from sticking to the bottom of the pan.
If you desire, you can opt for water and a chicken stock cube instead of broth. Also, you can use heavy cream instead of coconut milk.
