Ramadan Recipe: Mujadara

Mujadara is a traditional Levantine dish made from lentils, rice, and caramelized onions. It is a simple, flavorful meal that provides a healthy balance of protein, fiber, and carbohydrates. The dish is typically seasoned with salt and olive oil, making it both nutritious and comforting. Often served as a main or side dish, Mujadara is a staple in Middle Eastern cuisine and is enjoyed during fasting periods like Ramadan.

  • Ingredients of Mujadara

Mujadara

1 cup dry brown lentils
1 cup short grain rice
1 cup long grain rice
1 cup olive oil
2 large white onions, sliced
2 tbsp flour
Salt and pepper to taste
  • Method & Directions of Mujadara

  1. Soak the Rice

    Mix your short grain and long grain rice and wash thoroughly. Soak in boiling water for at least 15 minutes.
  2. Boil the Lentils

    In a pot, add the dry lentils and equal parts of room-temperature water. Bring to a boil until the lentils are fully cooked, 10 to 15 minutes at most. Drain and set aside.
  3. Fry the Onions

    Slice your onions and coat them with flour, making them extra crispy. Fry in olive oil, strain, and set aside.
  4. Cook the Rice

    In a pot, add the olive oil you used to fry the onions. Drain your rice and sauté it with the lentils in olive oil for 2 to 3 minutes. Pour in 1 ½ cups of boiling water – or until it covers the rice and lentils. Reduce the heat to the lowest, cover, and let cook for another 10 minutes.
  5. Add in the Fried Onions

    Once your rice is cooked and fluffy, take it off the heat and mix the onions in. Serve this dish with a green salad or plain yogurt.
