  • Ingredients of Microwave Dubai Chocolate Cake

Cake

1 egg
¾ cup milk
½ cup vegetable oil
½ cup stevia or white sugar
1 tsp vanilla extract
1 tsp baking powder
2 tbsp unsweetened cocoa powder
1 cup self-rising flour
1 cup milk, for soaking

Pistachio Layer

1 tbsp butter
2 cups Knafeh pastry
4 tbsp pistachio butter
Extra for pistachio butter to garnish
1 tbsp crushed pistachios
1 tsp tahini

Chocolate Layer

1 ½ cups of chocolate chips (choose stevia-sweetened for less calories)
½ cup heavy cream

  1. Prepare the Cake

    First, mix all the cake ingredients (egg, milk, vegetable oil, stevia, vanilla, baking powder, cocoa powder, and flour) in your serving dish making sure it is microwave-friendly.
  2. Microwave the Cake

    Now, bake your cake in the microwave for 8 minutes. Check with a toothpick, and when fully baked take out, pierce with a toothpick all over, and soak with the milk immediately while hot.
  3. Prepare the Pistachio Filling

    For the cake's second layer, mix butter and Knafeh pastry in a saucepan and stir until golden brown. Transfer to a cool plate, add crushed pistachios, pistachio butter, and tahini, and mix well. Then, spread the mixture well over the chocolate cake.
  4. Make the Chocolate Layer

    Place chocolate chips (or any kind you prefer) with heavy cream in a microwavable bowl, and microwave for 20 seconds at a time mixing regularly until chocolate melts and you have a thick sauce. Spread over the pistachio layer evenly.
  5. Garnish

    Finally, transfer the pistachio cream into a piping bag and pipe stripes over the chocolate layer. Next, use a toothpick or wooden skewer to draw lines up and down, creating an eye-catching pattern. Serve and enjoy your delicious creation!
