Mabrousheh (Jam Bars) is a delightful Ramadan treat, perfect for iftar or suhoor. The name "Mabrousheh" comes from the Arabic word for "grated," referring to the beautifully textured dough topping. These buttery, jam-filled bars offer a perfect balance of sweetness and crunch, making them a comforting and festive dessert to share with loved ones during the holy month.

Jam Bars

2 Eggs
1 tbsp orange zest
1 tsp vanilla extract
½ cup sugar
1 cup unsalted butter, melted
3 cups all-purpose flour
1 tbsp baking powder
1 ½ cups jam (strawberry, blueberry or apricot)
Powdered Sugar to garnish

  1. Prepare the Wet Ingredients

    In a mixing bowl, beat together the sugar, melted butter, vanilla extract, eggs, and orange zest until the mixture turns pale yellow.
  2. Mix the Dry Ingredients

    Add the flour and baking powder to the wet mixture and combine using a rubber spatula, paddle attachment, or by hand until a soft dough forms.
  3. Chill the Dough

    Divide the dough in half—one portion for the base and the other for the topping. Place the topping dough in a Ziplock bag and freeze for 15 minutes.
  4. Preheat the Oven

    Set your oven to 180°C (350°F) and lightly grease a 23x33 cm (9x13-inch) baking pan.
  5. Assemble the Layers

    Press the remaining (non-frozen) dough into a thin, even layer on the bottom of the prepared pan. Spread the jam evenly on top, leaving a 2.50 cm (1-inch) border around the edges.
  6. Add the Streusel Topping

    Grate the chilled dough over the jam layer to create a streusel-like topping.
  7. Bake to Perfection

    Bake on the bottom rack for 25 minutes, then transfer to the top rack for another 10 minutes, until golden brown.
  8. Cool, Garnish, and Serve

    Allow the jam bars to cool completely before sprinkling them with powdered sugar. Slice into 16 even bars and enjoy!
