As it cools, the magic of science thickens the posset into a silky, custard-like texture without the need for gelatin or baking. Lemon Posset

2 ½ cups (600 ml) heavy whipping cream
1 cup (200 grams) granulated sugar
2 tbsp lemon zest (around 2 lemons)
⅓ cup (75 ml) fresh squeezed lemon juice
1 tsp vanilla extract

  1. Heat the Cream Mixture

    Place heavy cream, sugar, and lemon zest in a saucepan over medium-high heat. Stir until the sugar dissolves. Remove from heat when bubbles appear (do not boil).
  2. Add Lemon Juice

    Whisk in the fresh lemon juice and let the mixture cool for 10 minutes.
  3. Strain and Prepare Lemons

    Strain the mixture into a measuring cup for easy pouring. Cut lemons in half, hollow them out, and fill them with the mixture.
  4. Cool and Refrigerate

    Let the filled lemon halves cool at room temperature, then refrigerate for at least 1 hour or up to 3 days.
  5. Serve with Caramelized Sugar

    Before serving, sprinkle granulated sugar on top and caramelize it using a torch for a Brulé effect. Enjoy!
