Lasagna Soup

230 grams of lean ground beef
230 ground Italian sausage (beef, chicken, or turkey)
Salt and black pepper, to taste
1 yellow onion, chopped
1 tbsp olive oil
3 garlic cloves, minced
2 tbsp tomato paste
3 cups marinara sauce
¼ tsp red pepper flakes
2 tbsp fresh parsley, chopped
½ tsp dried oregano
1 tsp dried basil
7 cups chicken or vegetable broth
9 lasagna noodles, broken into pieces
2 cups fresh spinach leaves
1 ½ cups cheese (ricotta or cottage)
1 cup shredded mozzarella cheese
½ cup grated parmesan cheese
Fresh basil leaves, for serving

  1. Cook the Meat

    In a large pot over medium-high heat, cook the ground beef and sausage until browned. Season with salt and pepper as you cook. Once fully cooked, drain the grease and remove the meat from the pot.
  2. Sauté the Onions and Garlic

    In the same pot, heat olive oil over medium heat. Add diced onion and sauté for about 5 minutes, stirring occasionally. Then, add minced garlic and cook for another 1-2 minutes, until fragrant.
  3. Add Sauce and Spices

    Stir in tomato paste, marinara sauce, spices, and broth. Mix well to combine the flavors. Return the cooked meat to the pot, stirring everything together.
  4. Cook the Noodles

    Bring the soup to a boil, then add broken lasagna noodles (each piece should be about ¼ of a noodle). Reduce heat to medium-low and let it cook, stirring occasionally, until the noodles are tender. If using spinach, stir it in now.
  5. Prepare the Cheese Mixture

    In a small bowl, mix together mozzarella, Parmesan, and ricotta cheeses. This will be the creamy topping for the soup.
  6. Serve and Garnish

    Ladle the hot soup into serving bowls. Add a dollop of the cheese mixture on top of each bowl. Garnish with fresh basil and enjoy your delicious lasagna soup!
