Koshary is a beloved Egyptian comfort food, often considered the country's national dish. It combines layers of rice, lentils, and macaroni, topped with spiced chickpeas, crispy fried onions, and a rich tomato sauce. The dish is known for its hearty, filling nature and vibrant flavors. Traditionally, Koshary includes a vinegar-based sauce called Dukkah, which adds a tangy kick. This dish is typically served in large quantities, making it ideal for family meals or gatherings

  • Ingredients of Koshary

Lentil Rice

1 cup dry brown lentils
1 cup short-grain rice
1 tbsp cooking oil
1 ½ cups hot water
Salt to taste

Pasta

1 cup spaghetti
1 cup elbow pasta
Water
Pinch of salt
Drizzle of oil

Fried Onions

2 large onions, sliced
1 tbsp flour
½ cup cooking oil

Red Sauce

2 tbsp olive oil
2 crushed garlic cloves
2 large tomatoes
1 small onion, chopped
1 tbsp white vinegar
Salt and pepper

Chickpeas

1 cup canned chickpeas
1 tbsp ground cumin
Juice of 1 lemon
  • Method & Directions of Koshary

  1. Soak the Rice

    Wash your rice thoroughly, then soak it in hot water. Start with this as you will need the rice to soak for as long as possible.
  2. Cook the Lentils

    In a pot, add equal parts of water and lentils. Let boil until the lentils are perfectly cooked. Drain and make the lentil rice.
  3. Cook the Lentil Rice

    Drain the rice and sauté it with the drained lentils in an oiled pot over medium-high heat for a few minutes. Add the water till it covers the rice with the stock cubes, let boil for a minute then reduce the heat to the lowest, cover, and let cook for 15 minutes.
  4. Boil the Pasta

    In another pot, boil some water with a drizzle of cooking oil and a pinch of salt then boil the pasta until fully cooked.
  5. Fry the Onions

    Slice your onion and coat with flour. Fry in a skillet until golden brown.
  6. Prepare the Sauce

    Grab a pot, oil it, and place it over medium-high heat. Start by sauteing the crushed garlic and onions then add in the tomatoes and pepper and bring to a boil. Salt and pepper to taste, and you can add chili powder for an extra kick. Mix in some of the fried onions leaving more to garnish.
  7. Prepare the Chickpeas

    Drain your canned chickpeas and wash them thoroughly, then mix in the lemon juice and ground cumin.
  8. Assemble Your Koshary

    In a serving dish, start with the lentil rice - even it out then add the pasta to it. Pour in the tomato sauce and top with the fried onions and chickpeas.
