Kale Salad has been one of the most viral healthy salads all over the internet. There are many variations of this recipe, but many chefs agreed that this one is THE original kale salad recipe. It is super refreshing, providing you with all the nutrients you will need for a long day fast. Additionally, it is perfect for either your Ramadan Iftar or Suhoor.

  • Ingredients of Kale Salad

    • 10 Minutes

    • 300 Calories

Salad

4 large kale bundles, destemmed
½ cup pomegranate seeds
1 ripe avocado, diced
⅓ cup pumpkin seeds
2 bread slices, toasted
1 garlic clove, crushed

Dressing

1 tbsp tahini
1 tsp tamari sauce
2 tbsp olive oil
2 tsp apple cider vinegar
1 lime, juiced
Salt to taste

  1. Toss the Veggies Together

    In a large salad bowl, tear your kale from the stems, and add in the avocado, pomegranate seeds, crushed garlic, and pumpkin seeds.
  2. Make the Dressing

    In a mixing cub, whisk tahini, tamari sauce, olive oil, apple cider vinegar, lime juice and salt. Pour over the salad and mix. Top with the toasted bread and enjoy.
