Ramadan Recipe: Iraqi Stuffed Onions

Dolma is an Iraqi dish made of stuffed vegetables such as onions, zucchini, eggplant, green bell peppers, and grape leaves amongst others. This recipe only includes onions as they are the best part of Dolma to many people. You will end up with stuffed caramelized onions packed with mouthwatering flavors!

  • Ingredients of Iraqi Stuffed Onions

Onions

7 large white onions
Boiling water

Stuffing

200 grams ground lamb
100 grams ground lamb fat
2 cups short grain rice
1 tomato, finely chopped
1 small onion, finely chopped
4 crushed garlic cloves
½ fresh dill, chopped
3 tbsp pomegranate molasses
2 tbsp tamarind paste
2 tbsp tomato paste
3 tbsp olive oil
1 tsp onion powder
1 tsp garlic powder
1 tsp ground dry lime
2 tsp stock powder
Salt and pepper to taste
3 tbsp vegetable oil

Sauce

2 tbsp tomato paste
2 tbsp tamarind paste
3 tbsp pomegranate molasses
4 cups boiling water
Salt and pepper
  • Method & Directions of Iraqi Stuffed Onions

  1. Boil the Onions

    Peel your onions and make a horizontal cut only to its core layer. Boil in water for a few minutes until you can easily peel off the layers one by one.
  2. Make the Stuffing

    In a large mixing bowl, combine the meat, fat, rice, tomato, onion, garlic, and dill and season with pomegranate molasses, tamarind paste, tomato paste, olive oil, onion powder, garlic powder, ground lime, stock powder, salt, pepper and vegetable oil.
  3. Start Stuffing the Onions

    Stuff your onion layers with 1 to 2 tablespoons of the stuffing. Roll the onion until it looks kind of like a shallot (oval-shaped). Repeat until you run out of the stuffing and onions.
  4. Caramelize the Stuffed Onions

    In a large pot, add some oil and arrange your onions. Cook until they are caramelized. This is key for that special Dolma taste.
  5. Make the Sauce

    In 4 cups of boiling water, stir in the tomato paste, tamarind paste, pomegranate molasses, salt, and pepper. Then pour it over the onions and let it simmer. Cover, lower the heat, and cook for 1 and a half hours to 2 hours. Enjoy!
