  • Ingredients of Honey Cake

Honey Cake

1 cup of brown sugar
3 whole large eggs
¾ cup of canola oil
1 cup of honey
2 ½ cups flour
2 tsp cinnamon
¾ tbsp baking powder
1 tsp baking soda
1 cup of strong black tea (two tea bags)
½ cup of sliced raw almonds
A drizzle of honey to garnish

  1. Steep the Tea

    Throw the 2 tea bags in 1 cup of hot water until dark. Set aside to cool.
  2. Prepare the Wet Ingredients

    Whisk the eggs and brown sugar until smooth, then gradually add oil followed by the honey. Keep mixing for about 1 minute.
  3. Add the Dry Ingredients

    Now, sift the flour into the wet batter and mix until combined. Then, sift the baking soda, baking powder, and cinnamon. Mix until blended perfectly.
  4. Gradually Add the Tea

    Pour the tea into the batter very slowly while whisking. This will ensure a fluffy cake. Transfer the batter to a greased loaf pan and tap it on the counter to release air bubbles.
  5. Bake

    Top the batter with sliced almonds and bake in a preheated oven at 180°C for 30 to 40 minutes. When cool, drizzle with honey and enjoy!
