Halawet Al Jibn is a traditional Arabic dessert made with soft, sweet cheese dough, stuffed with fresh cream or Ashta (clotted cream). These rolls are then drizzled with a simple sweet syrup, offering a perfect balance of sweetness and richness. This classic treat is popular across the Middle East, particularly during festive occasions and special gatherings, and can be enjoyed warm or cold.

Halawet Al Jibn

1 ½ cups water
¾ cup sugar
1 cup fine semolina
2 cups mozzarella cheese, shredded
1 tbsp rose water
1 tbsp orange blossom water
400 grams fresh cream (Ashta)

  1. Prepare the Dough

    In a saucepan, combine water and sugar over medium-high heat. Stir occasionally until the sugar dissolves. Bring to a boil, then slowly add fine semolina, stirring constantly for about 30 seconds until thickened.
  2. Add Cheese and Rose Water

    Lower the heat to medium, then stir in the cheese and rose water. Keep stirring until the cheese melts and the mixture forms a soft dough. Allow the dough to cool slightly until it's warm enough to handle.
  3. Roll Out the Dough

    Divide the dough into two equal pieces. Cover one half and set it aside. Roll out the other half between two sheets of plastic wrap into a 23x33 cm (9x13-inch) rectangle. Trim off the irregular sides to make a clean, straight-edged rectangle.
  4. Add the Filling

    Fill a piping bag with clotted cream (Ashta), and pipe along the long side of the dough, leaving a 2.50 cm (1-inch) border. Alternatively, spoon the cream onto the dough.
  5. Roll and Cut the Dough

    Using the plastic wrap, roll the dough over the filling to form a log. Cut off the excess dough and repeat the process with the remaining dough. For cleaner cuts, freeze the logs for 15 minutes, then slice them into 4.45 cm (1 3/4-inch) pieces.
  6. Serve and Garnish

    Arrange the rolls on a platter, sprinkling ground pistachios in the center and adding rose petal jam. Serve with syrup, drizzling each piece with some before eating.
  7. Store in the Refrigerator
