Ramadan Recipe: Green Goddess Salad

The Green Goddess Salad is one of the most viral salads on TikTok and Instagram. It is a mixture of green vegetables coated in a creamy and insanely rich dressing – which is the star of this salad. This salad is refreshing and makes for a perfect side dish. You can eat it as it is or dip it in crackers or salted tortilla chips.

  • Ingredients of Green Goddess Salad

Dressing

1 avocado
1 cup fresh spinach
2 cloves garlic
1 small red onion
2 lemons, juiced
¼ cup olive oil
¼ cup cashews
1 teaspoon salt
2 tablespoons rice vinegar
⅓ cup nutritional yeast (optional)

Salad

1 small head green cabbage, chopped
4 medium cucumbers, deseeded and chopped
¼ cup chives, chopped
1 bunch green onions, chopped

  1. Make the Dressing

    In a blender or food processor, blend the avocado, spinach, garlic, red onion, lemon juice, olive oil, cashews, rice vinegar, and nutritional yeast (if available). Adjust salt to taste.
  2. You can add 1 or 2 deseeded jalapenos for an extra kick.

  3. Assemble the salad

    After finely chopping your green vegetables, place them in a large salad bowl and pour in the dressing. Mix everything well and chill it for a little while. Serve with tortilla chips for an extra crunch.
