Salad

1 can of chickpeas, strained
1 can fava beans, strained
3 tomatoes, chopped
1 bundle fresh parsley, chopped
⅓ cup fresh mint, chopped
3 lemons, juiced
2 garlic cloves, crushed
1 tbsp ground cumin
1 tbsp salt
1 tsp black pepper
¼ cup olive oil
  • Method & Directions of Fava Beans & Chickpea Salad

  1. Cook the Chickpeas and Fava Beans

    In a pot over medium heat, add your strained chickpeas and fava beans. Season with the juice of 1 lemon, cumin, salt and pepper.
  2. Prepare the Salad

    Chop your tomatoes, onions, parsley, and mint and toss in a large salad bowl. Mix in the juice of 2 lemons, garlic, and olive oil. Add the chickpeas and fava beans, mix well, and serve warm.
