- 1 large yellow onion, quartered
- 2 cloves garlic
- 1 green bell pepper, cored and cut into large chunks
- 1 jalapeno, halved and seeded
- ½ bundle fresh parsley, stems trimmed
- 900 grams lean ground beef
- 3 tbsp tomato paste
- Kosher salt
- Extra virgin olive oil
- 6 loaves of pita bread, the kind with pockets

- 1 tsp coriander
- 1 tsp allspice
- 1 tsp paprika
- 1 tsp black pepper
- ½ tsp cumin
- ¾ tsp cardamom
- ¼ tsp cinnamon

- Preheat the Oven

- Mix the Spices
تم نسخ الرابطIn a small bowl, combine all the spices and mix well to ensure an even blend.
- Process the Vegetables
تم نسخ الرابطPlace the onion, garlic, bell pepper, jalapeño, and parsley into a food processor with a blade attachment. Pulse a few times until everything is finely chopped. Transfer the mixture to a sieve and press with the back of a spoon to drain excess liquid.
- Prepare the Meat Mixture
تم نسخ الرابطIn a large mixing bowl, combine the drained vegetable mixture with the ground beef and tomato paste. Sprinkle in the spice mixture along with a pinch of kosher salt. Mix thoroughly until everything is evenly distributed.
- Prepare the Pita Pockets
تم نسخ الرابطCut the pita loaves in half, creating 12 pita pockets. Lightly brush a large sheet pan with extra virgin olive oil.
- Fill the Pitas
تم نسخ الرابطSpoon ⅓ cup of the meat mixture into each pita pocket, using the back of a spoon to spread it evenly inside. Arrange the filled pitas on the prepared sheet pan. Brush the tops with a little extra virgin olive oil.
- Bake the Pitas
تم نسخ الرابطPlace the sheet pan in the preheated oven and bake for 15 minutes. Carefully flip each pita over and continue baking for another 5 to 10 minutes, until the meat is fully cooked and the pita is crisp on both sides.
