Ingredients of Easy Veggie Noodles

- 250 grams noodles
- 1 yellow bell pepper
- 1 small onion
- 1 red bell pepper
- 1 carrot
- 3 garlic cloves
- 1 tbsp butter
- A drizzle of olive oil

- 2 tbsp tomato paste
- ½ lemon, juiced
- Sweet soy sauce
- 1 tsp ketchup
- 1 tsp garlic powder
- Salt to taste

- Cook the Noodles
تم نسخ الرابطIn a pot, add boiling water and cook your noodles according to the package directions. Drain and save ½ cup of the noodle water.
- Cook the Veggies
تم نسخ الرابطIn another pan, melt some butter with a drizzle of olive oil. Thinly slice your garlic and sauté it in the butter and oil mixture. Chop your bell peppers, carrot, and onion into thin slices and toss them with the garlic. Stir fry them until they get nicely charred then add the noodles.
- Prepare the Sauce
تم نسخ الرابطMix tomato paste, lemon juice, sweet soy sauce ketchup, salt, and garlic powder into the saved pasta water. Pour onto the veggies and noodles. Let simmer for a few minutes, adjust the salt if needed. Top with the cheese of your choice and enjoy!
