Date Muffins

1 cup pitted dates, chopped
1 cup boiling water
2 cups all-purpose flour
½ tsp baking soda
1 tsp baking powder
½ tsp fine sea salt
1 tsp ground cinnamon
2 large eggs, room temperature
¾ cup dark brown sugar
¼ cup white granulated sugar
1 tsp pure vanilla extract
½ cup unsalted butter, melted and slightly cooled
1 cup buttermilk, room temperature
2 tbsp turbinado sugar for topping optional

  1. Preheat and Prepare the Muffin Pan

    Preheat the oven to 220°C. Lightly grease a standard 12-cup muffin pan with baking spray or line it with 12 muffin liners to prevent sticking.
  2. Soak the Dates

    Place the chopped, pitted dates in a bowl and pour boiling water over them. Let the dates soak for 10 minutes until they become soft and paste-like. Meanwhile, proceed with preparing the other ingredients.
  3. Mix the Dry Ingredients

    In a large mixing bowl, whisk together the all-purpose flour, baking soda, baking powder, salt, and ground cinnamon to ensure an even distribution of ingredients.
  4. Mix the Wet Ingredients

    In a separate bowl, whisk the eggs and both sugars until smooth, making sure to break up any lumps in the brown sugar. Stir in the vanilla extract, then gradually mix in the melted butter, followed by the buttermilk, until fully combined.
  5. If you don’t have buttermilk, simply mix 1 tbsp vinegar or lemon juice with 1 cup milk and let sit for 5 minutes.

  6. Add the Dates to the Wet Mixture

    Drain the softened dates, removing excess liquid with the back of a spoon. The dates should be very soft and paste-like. Stir them into the buttermilk mixture, ensuring they are evenly incorporated.
  7. Combine Wet and Dry Ingredients

    Gently fold the date and buttermilk mixture into the dry ingredients. Stir until no streaks of flour remain, being careful not to overmix. Let the batter rest for 10 minutes to allow for better texture and rise.
  8. Fill the Muffin Cups

    Once the batter has rested, divide it evenly among the 12 muffin cups. For taller muffins, use only 9 cups and fill them to the top. If desired, sprinkle turbinado sugar on top for extra crunch.
  9. Bake the Muffins

    Place the muffin pan in the preheated oven and bake at 220°C for 6 minutes. After 6 minutes, reduce the oven temperature to 175°C and continue baking for 15-20 minutes, or until the muffins turn golden brown and a toothpick inserted into the center comes out clean.
  10. Cool and Serve

    Let the muffins cool in the pan for 5-10 minutes before transferring them to a wire rack. Enjoy warm or at room temperature with a cup of tea or coffee!
