Creamy Mushroom Soup

2 tbsp extra-virgin olive oil, plus more for serving
2 tbsp unsalted butter
1 medium yellow onion, chopped
½ tsp sea salt
Freshly ground black pepper
450 grams white button mushrooms, stemmed and sliced
230 grams cremini mushrooms, stemmed and sliced
2 cloves garlic, grated
¼ cup apple cider vinegar
3 cups vegetable broth
1 tbsp tamari sauce
1 tbsp fresh thyme leaves, plus more for garnish
½ cup heavy cream
Chopped fresh parsley for garnish

  1. Sauté the Aromatics

    Heat olive oil and butter in a large pot over medium heat. Add the onion, salt, and a few grinds of pepper, cooking for about 2 minutes until slightly softened.
  2. Cook the Mushrooms

    Add half the mushrooms and cook, stirring occasionally, for 5 minutes until they start to soften. Then, add the remaining mushrooms and continue cooking for another 5 minutes.
  3. Simmer the Soup

    Stir in the garlic, followed by the white wine, broth, tamari, and thyme. Cover the pot and let the soup simmer for 15 minutes, allowing the flavors to meld together.
  4. Blend for a Creamy Texture

    Allow the soup to cool slightly before transferring two-thirds of it to a blender. Blend until smooth, then pour the blended portion back into the pot with the remaining chunky soup, creating a rich and balanced texture.
  5. Finish and Serve

    If desired, stir in the cream and cook for another 2 minutes until warmed through and the raw cream taste is gone. Adjust seasoning to taste. Ladle into bowls and garnish with a drizzle of olive oil or cream, fresh parsley, and thyme before serving. Enjoy warm!
