Couscous Salad

1 ½ cups dried pearl couscous
Salt and fresh ground black pepper
¼ cup extra-virgin olive oil
1 tsp Dijon mustard
½ tsp honey
1 tsp fresh lemon zest
4 tbsp fresh lemon juice
1 medium cucumber, diced
1 large tomato, diced
½ cup parsley, chopped
¼ cup walnuts, chopped and toasted
¼ cup golden raisins

  1. Cook the Couscous

    Bring a large saucepan of salted water to a boil. Add the couscous and cook until tender, about 8-10 minutes. Drain and set aside.
  2. Prepare the Dressing

    In a large bowl, whisk together oil, mustard, honey, lemon zest, lemon juice, 1/2 teaspoon of salt, and 1/4 teaspoon of pepper. Add the drained couscous to the dressing and mix well.
  3. Combine the Ingredients

    Stir in the cucumber, tomato, herbs, walnuts, and raisins. Taste and adjust seasoning with salt and pepper as needed.
  4. Serve

    Enjoy the couscous salad warm or cover and refrigerate it for about 1 hour to serve it chilled.
