Basbousa is a popular, sweet semolina cake enjoyed during Ramadan. Its light, moist texture and sweet syrupy glaze make it a perfect treat to break the fast. Basbousa is both satisfying and refreshing and infused with coconut and pistachios flavors. The combination of sweetness and richness, paired with a cup of tea or coffee, makes it a beloved dessert that adds joy to Ramadan celebrations and gatherings.

  • Ingredients of Basbousa

Batter

1 cup semolina
1 cup shredded coconuts
½ cup sugar
½ oil
¾ cup yogurt (170 grams)
2 eggs
1 tbsp baking powder
1 tsp ground cardamom
1 tsp vanilla (extract or powder)

Cream

Fresh thick cream
Piping bag

Syrup

¼ cup sugar
½ cup water
1 tbsp rose water
1 tsp lemon zest (optional)
  • Method & Directions of Basbousa

  1. Preheat the Oven

    Preheat your oven to 180 degrees Celsius before starting your batter.
  2. Make the Batter

    In a large mixing bowl, whisk the semolina, shredded coconuts, sugar, oil, yogurt, eggs, baking powder, ground cardamom, and vanilla. Pour into a greased nonstick mold or Pyrex.
  3. Cream Layer

    Transfer the thick cream into a piping bag and pipe it onto the batter in a crisscross pattern.
  4. Bake Your Basbousa

    Bake the Basbousa at 180°C for 20 minutes, or until the edges turn golden brown. Then, broil for an additional 10 minutes, or until it develops a rich, golden color.
  5. Make the Syrup

    While the Basbousa is baking, prepare the sugar syrup. In a pot, combine the sugar, water, and rosewater, and let it simmer till you get a thick syrup. Once the Basbousa is out of the oven, pour the syrup over it immediately. Let it cool and serve!
