Salad

2 medium cucumbers, sliced
½ red onion, sliced
½ cup canned corn, washed and strained
1 cup canned black beans, washed and strained
⅓ cup fresh cilantro, chopped
2 chicken breasts, cooked and shredded

Dressing

1 bunch fresh cilantro
1 green pepper (chili if you prefer)
2 small tomatillos (green tomatoes)
1 small avocado
1 lime, juiced
2 tbsp sour cream
1 tbsp chicken Bouillon cube
2 tbsp milk
  • Method & Directions of Cilantro Lime Chicken Salad

  1. Mix the Veggies

    In a salad bowl, toss the sliced cucumbers and red onions. Wash and strain the canned corn and black beans, then add them to the bowl. Cover and let it chill in the fridge while you prepare the rest.
  2. Make the Dressing

    In a blender, combine cilantro, green pepper, tomatillos, avocado, lime juice, sour cream, chicken bouillon, and milk. Blend until smooth, adjusting the consistency with more milk if needed.
  3. Cook and Shred the Chicken

    If using fresh chicken, flatten the chicken breasts slightly, season with salt and pepper, and cook in a hot, oiled pan for about 5 minutes per side. Once fully cooked, shred the chicken and set aside. Keep in mind that leftover chicken works just as well!
  4. Assemble the Salad

    Add freshly chopped cilantro, shredded chicken, and the prepared dressing to the salad bowl. Toss everything together, adjust the seasoning with salt or lime juice, and enjoy on its own or with crispy tortilla chips!
