Ramadan Recipe: Chicken Pho

Chicken Pho is a flavorful and comforting dish, perfect for Ramadan. This Vietnamese noodle soup features a rich, aromatic broth made by simmering chicken, ginger, onions, and spices like cinnamon, star anise, and cloves. The broth is served over rice noodles and topped with tender chicken, fresh herbs like cilantro and basil, bean sprouts, and a squeeze of lime. It’s light, nourishing, and hydrating, making it an ideal dish for Iftar or Suhoor during Ramadan.

Chicken Pho

2 chicken breasts, boneless and skinless
1 large onion
1 piece ginger
2 anise stars
4 cloves
1 cinnamon stick
1 bay leaf
1 tsp coriander seeds
1 tsp black pepper seeds
1 tbsp brown sugar
Salt to taste
1 pack of rice noodles
Fresh cilantro, chopped
1 Green onion, chopped
Lime juice
Sriracha
Hoisin sauce
  • Method & Directions of Chicken Pho

  1. Bake the Onion and Ginger

    Peel your onion and cut it in half, cut the ginger piece in half, and place both in a baking dish. Bake at 180 degrees Celsius for 30 minutes.
  2. Roast the Spices

    In a hot pan, roast the coriander seeds, black pepper seeds, anise stars, cloves, cinnamon sticks, and bay leaves for 3 -4 minutes. This will allow the spices to release their aroma for more flavor.
  3. Cook the Chicken

    Add the chicken breasts and 1 liter of room-temperature water to a large pot. Then, add your roasted spices, baked onion, ginger, salt, and brown sugar. Bring the mixture to a boil over medium-high heat, then reduce the heat and let it simmer. As it comes to a boil, scoop off the foam from the surface repeatedly to get a clear soup. Let it simmer for about 20 minutes or until the chicken is fully cooked and tender. Once done, remove the chicken, shred it, and strain the broth to remove the solids.
  4. Assemble the Pho Bowl

    Cook the noodles according to the package instructions, then strain them and divide them into 4 portions in separate bowls. Top each bowl with fresh chopped cilantro, green onions, and shredded chicken. Pour the hot, strained soup over the noodles and chicken. Squeeze some lime juice over each bowl and add a sriracha and hoisin sauce dollop for extra flavor and spice. Serve immediately and enjoy your delicious Chicken Pho!
