  • Ingredients of Chicken Cashew

Chicken

3 boneless and skinless chicken breasts, diced
1 tbsp corn starch
1 tbsp soy sauce
1 cup cashews, toasted

Sauce

½ cup light soy sauce
¼ cup oyster sauce
1 tbsp cornstarch
1 cup cold water
1 tsp sesame oil

Vegetables

1 large onion
1 red pepper
1 green pepper
1 tbsp garlic, minced
2 tbsp ginger, minced
4 tbsp cooking oil

  1. Prepare the Chicken

    First, toss your chicken in cornstarch and soy sauce until fully coated. Cook in a wok or nonstick pan with 2 tablespoons of cooking oil until golden. Once cooked, remove the chicken from the wok and set it aside.
  2. Cook the Vegetables

    Chop your veggies into bite-sized chunks. Toss them into the hot oil, starting with the onions, followed by the colored peppers. Add minced garlic and ginger and toss again. Cook for about 5 minutes, ensuring the veggies have a nice char and remain crunchy.
  3. Add Chicken and Sauce

    Add the cooked chicken to your veggies, then prepare the sauce by mixing soy sauce, oyster sauce, cornstarch, cold water, and sesame oil. Whisk well until the cornstarch dissolves, then pour the sauce into the wok along with the toasted cashews. Serve with steamed rice, a sprinkle of toasted sesame, and enjoy!
