Baked Carrot Cake Oats

⅔ cup (60 grams) oats
½ cup (50 grams) grated carrots
¾ cup (200 grams) Greek yogurt
2 medium eggs
½ tsp cinnamon
½ tsp ginger
½ tsp mixed spice
½ tsp baking powder
1 tsp brown sugar

  1. Preheat the Oven

    First, preheat your oven to 200°C before making your batter.
  2. Make the Batter

    In a baking dish or a Pyrex, combine oats, grated carrots, yogurt, and eggs then mix well.
  3. Add the Spices

    Now, add the cinnamon, ginger, mixed spice, brown sugar, and baking powder and mix well.
  4. Bake

    Now, Place the baking dish in the oven and bake the healthy carrot cake for approximately 30 minutes, or until a toothpick inserted in the center comes out clean.
