Caramelized Carrots

1 bunch carrots, peeled
¼ cup olive oil
3 tbsp honey
½ orange, juiced and zested
1 lime, juiced and zested
¼ cup currents
¼ cup pine nuts
1 cup plain Greek yogurt
1 garlic clove, grated
2 tbsp honey
1 bunch parsley, chopped
Salt and pepper to taste
3 tbsp crumbled feta

  1. Preheat and Prepare

    Preheat the oven to 190°C. Line a baking dish with parchment paper. Peel and wash the carrots, then pat them dry and add them to the baking dish.
  2. Make the Dressing

    In a small bowl, combine olive oil, honey, orange juice, lime juice, salt, and pepper. Mix until well combined. Pour the mixture over the carrots and toss until they are evenly coated.
  3. Roast the Carrots

    Roast the carrots in the oven for 40-45 minutes, flipping halfway through, until they are cooked to your liking.
  4. Prepare the Yogurt Base

    While the carrots are roasting, spread Greek yogurt on a plate, smoothing it out with the back of a spoon. Grate the garlic, lime zest, and orange zest over the yogurt, then mix until fully combined.
  5. Assemble the Dish

    When the carrots are ready, remove them from the oven and place them on top of the yogurt.
  6. Garnish and Serve
