If you are a fan of Levantine cuisine, then surely you know the good old-fashioned Tabbouleh. It is a finely chopped salad with parsley and bulgur as essential ingredients. In Armenian cuisine, the Tabbouleh is a bit different – the bulgur is cooked not soaked, and the vegetables do not need to be as finely chopped as a Lebanese Tabbouleh for instance. In any case, this dish is perfect for Ramadan Iftars!

- 2 tbsp olive oil
- 1 medium onion, finely chopped
- 1 tbsp tomato paste
- 1 tsp salt
- 1 tsp cumin
- 1 cup bulgur
- 1 cup water
Bulgur Mix
- 1 tomato
- ½ lemon
- 1 cup parsley
- 1 cup mint
Chopped Vegetables
- ½ cup olive oil
- ½ cup pomegranate molasses
- Romaine lettuce and spring onion to garnish

- Cook the Bulgur
تم نسخ الرابطFor this recipe, you will need to start with a hot pan with olive oil in it. Chop your onions and sauté them. When translucent, add the tomato paste, salt, cumin,, and washed bulgur. Sauté the bulgur for a minute, then add the cup of hot water and let cook on low heat until fluffy.
- Prepare the Salad
تم نسخ الرابطChop up your veggies into medium-small pieces and toss them together in a salad bowl. Make the dressing by combining equal parts of olive oil and pomegranate molasses and adjust the salt to taste.
- Mix in the Bulgur
