  • Ingredients of Armenian Soup

Armenian Soup

2 tbsp cooking oil
1 large onion, chopped
2 garlic cloves, minced
4 tbsp tomato pasta
2 tbsp red pepper paste
250 grams of minced beef
250 grams conchiglie pasta
2 cups canned chickpeas
1 cup baby spinach
1 tbsp salt
1 tsp paprika
½ tsp pepper
½ tsp cinnamon powder
1 tbsp dried mint
2 garlic cloves, crushed
1 lemon, juiced
  • Method & Directions of Armenian Soup

  1. Sauté Onion and Garlic

    Heat oil in a pot, and sauté onion and garlic until translucent. Then, add tomato paste and red pepper pasta.
  2. Cook the Beef

    Add the minced beef to the onion and garlic, break apart then season with salt, paprika, black pepper, and cinnamon.
  3. Cook the Pasta

    Get the conchiglie pasta (which is shell-shaped pasta) and cook only halfway through.
  4. Combine Pasta and Beef

    Add 6 cups of water over the beef and transfer the conchiglie pasta to it along with the chickpeas, spinach, crushed garlic, and dried mint.
  5. Bring to a Boil

    Once the water starts bubbling, reduce heat and cover the pot. Let the soup simmer for 10 to 15 minutes, then serve and enjoy with some lemon juice.
