Ramadan Recipe: Apricot Fruit Leather

Apricot Fruit Leather is a delicious, homemade treat similar to a fruit roll-up, made by pureeing and drying ripe apricots. Naturally sweet and chewy, it’s a great snack on its own or can be transformed into Amar Al Din, a popular Ramadan drink. Simply soak the dried apricot leather in water, blend, and strain for a refreshing, vitamin-rich juice enjoyed at Iftar. Perfect for both snacking and traditional Ramadan flavors! This recipe yields 3 baking sheets of apricot fruit roll-ups or fruit leather.

Apricot Fruit Leather

2.27 kilograms ripe sweet apricots (about 65 apricots)
½ cup granulated sugar

  1. Prepare the Apricots

    Rinse the apricots thoroughly under running water. Cut them in half and remove the pits.
  2. Bake the Apricots

    Place the halved apricots, cut-side up, on a large baking sheet. It’s okay if they are crowded in a smaller pan. Bake at 200˚C for 15 minutes. Once baked, remove them from the oven and allow them to cool until they are just warm enough to handle.
  3. Blend into a Smooth Puree

    Transfer the softened apricots into a blender or food processor in batches. Blend until the mixture becomes smooth and even in texture.
  4. Sweeten the Puree

    Pour the blended apricot puree into a large mixing bowl. Add ½ cup of sugar (or adjust to taste) and stir until the sugar is fully incorporated.
  5. Sun-Drying Fruit Leather

    Spread the puree 0.3 to 0.6 cm thick on parchment or plastic wrap-lined baking sheets. Place in direct sunlight until the center is no longer sticky—about a day in hot weather or two in warm sun. Store indoors uncovered overnight if needed.
  6. Oven-Drying Fruit Leather

    Spread the puree on a parchment-lined baking sheet. Bake at 95°C for 3 to 3.5 hours, depending on thickness. It’s ready when the center is no longer sticky. Let cool, then roll and store in Ziplock or vacuum-sealed bags at room temperature.
