Apple Fritters

2 eggs
2 tbsp sugar
½ cup milk
1 tbsp vanilla powder
1 cup flour
2 tbsp baking powder
½ tbsp ground cinnamon
½ tsp salt
3 apples, peeled and diced
2 cups oil

Glaze

1 ½ cup powdered sugar
1 tbsp vanilla powder
½ tbsp ground cinnamon
¼ cup milk

  1. Make the Batter

    In a large mixing bowl, whisk together the eggs, sugar, and vanilla until well combined. Add the milk and whisk again. Mix the flour, baking powder, cinnamon, and salt into the wet ingredients until smooth. Finally, fold in the peeled and diced apples.
  2. Fry the Fritters

    Scoop ¼ cup of batter and fry it in hot oil, cooking both sides until golden brown. Remove and place on a paper towel to drain.
  3. Make the Icing

    In a separate mixing bowl, whisk together powdered sugar, vanilla, cinnamon, and milk until a thick glaze forms. Dip the apple fritters into the glaze and serve!
