  • Ingredients of Pistachio Kahk

Kahk

3 cups flour
⅛ tsp salt
1 tbsp granulated sugar
½ tsp cinnamon
3 tbsp toasted sesame seeds- optional but highly recommended.
½ tsp dry yeast
1 cup ghee- room temperature and not melted
⅓ cup warm water

Pistachios Filling

1 tbsp ghee or butter
1 tbsp flour
1 tsp sesame seeds
¼ cup honey
½ cup pistachios coarsely ground

  1. Prepare the Dough

    In a mixing bowl, combine flour, salt, sugar, yeast, cinnamon, and sesame seeds. Add room temperature ghee (not melted) and mix until fully incorporated. Gradually add water and mix until a smooth, consistent dough forms. Cover the dough and let it rest for one hour.
  2. Prepare the Filling

    In a small pot, melt ghee or butter over medium heat. Add flour and cook, stirring constantly, until the flour turns golden brown. Remove from heat, then add sesame seeds and honey, mixing well. Return to low heat and cook until the mixture thickens. Take off the heat, stir in pistachios, and let the filling cool for about 10 minutes. Form the mixture into 20 small balls.
  3. Shape the Dough and Fill

    Once the dough has rested, divide it into 20 equal balls, about 40 grams each. Place the dough balls on a plate and cover them with plastic wrap. Take each dough ball, place one pistachio filling ball in the center, and close the dough around the filling. Gently press the dough into a Mamoul tool or use a fork to create engravings.
  4. Bake the Kahk

    Place the filled dough balls on a parchment-lined cookie sheet. Bake in a 175°C oven for 20-25 minutes, or until the bottoms are golden brown. Let the cookies cool on a wire rack. Once cooled, store them in an airtight container.
  5. Serve and Enjoy

    When ready to enjoy, dust the top of the kahk with powdered sugar for a sweet finishing touch.
