Dubai Municipality has reinforced its stance on the use of alcohol in food preparation, sending a reminder to hotels and restaurants about long-standing regulations. A recent email from the Food Safety Department reiterates that using alcohol in cooking or food preparation is "strictly prohibited."

What Does the Circular Say?

The email highlights that while venues may hold permits issued by Dubai Police to serve alcoholic beverages, these permits do not extend to using alcohol as an ingredient in food. A document from March 15, 2010, titled ‘Forbiddance Using Alcohol as an Ingredient in Preparation of Meals’, was attached to the circular as a reference.

Key Rules Mentioned in the Circular:

  1. Alcohol cannot be used in the preparation or cooking of meals.
  2. Food products containing alcohol cannot be displayed or sold.

  4. Alcohol must be stored, prepared, and displayed completely separate from food products.

These regulations are rooted in Local Order #11 for 2003, specifically clause number 15, which has guided food establishments in Dubai for years.

Restaurants and chefs across the city are now revisiting their menus to ensure compliance. This means removing dishes that include alcohol as an ingredient, such as certain sauces, desserts, or flambé dishes.

Some establishments are turning to creative substitutes, like using non-alcoholic wine or other flavor-enhancing ingredients to maintain the richness of their recipes without breaking the rules.
