Mutabbaq is a delicious stuffed paratha with spicy minced meat, which is a popular street food snack in Saudi Arabia that you should not miss on Saudi National Day.
Ingredients

- 1 cup all-purpose flour
- 1 tablespoon oil
- 1/4 teaspoon salt
- 1/2 cup lukewarm water
The Dough
- 1 tablespoon oil
- 200g minced beef
- 1/2 tablespoon ginger garlic paste
- 1/2 teaspoon black pepper
- 1/2 teaspoon salt or to taste
- 1/2 teaspoon cumin powder
- 1/2 teaspoon red chilli powder
- 1/4 teaspoon turmeric powder
- 2 eggs
- 1 tomato roughly chopped
- 1/2 cup green onions chopped

- Make the dough
تم نسخ الرابطIn a bowl, add flour, oil and salt, and mix well, then slowly start adding water, about 1 tablespoon at a time, and knead until the dough starts leaving the sides of the bowl, and forms into a ball.
- Let it rest
تم نسخ الرابطOnce the dough is smooth and soft, but not sticky, brush it with a little bit of oil, cover it, and let it rest for 30 minutes.
- Cook the minced meat
تم نسخ الرابطIn a frying pan, add oil and meat, cook for a minute, and then add the ginger garlic paste and spices, and stir until the minced meat is browned and cooked.
- Prepare the filling
تم نسخ الرابطAdd eggs to a mixing bowl, and add the cooked minced meat, then add the tomato and green onions, and mix until incorporated.
- Make the mutabbaq
تم نسخ الرابطDivide the dough into 3 equal balls, roll one ball into a rectangular shape until you can almost see through it, add the filling, and fold from the sides and the bottom to make it into a pocket.
- Fry the mutabbaq
تم نسخ الرابطHeat oil in a frying pan, add the mutabbaq bottom side down on medium-high, and poke with a toothpick to help the steam escape, then flip it when golden brown, and poke with a toothpick again.
- Serve!
