- 1/4 tsp ground cardamom
- 1/4 tsp ground white pepper
- 1/4 tsp saffron
- 1/4 tsp ground allspice
- 1/4 tsp dried whole lime powder
- 1/2 tsp ground cinnamon
Kabsa Spice Mix
- 2 tbsp butter
- 3 sliced onions
- 1 tbsp minced ginger
- 1 tbsp minced garlic
- 1 green chili
- 2 dried bay leaves
- 4 cardamom pods
- 1 cinnamon stick
- 2 tbsp tomato paste
- 1 pinch ground nutmeg
- 1/2 tsp ground black pepper
- 1/4 tsp ground cumin
- 1/2 tsp ground coriander
- 3 medium thinly sliced carrots
- 3 chopped tomatoes
- 2 chicken stock cubes
- 1 1/2 kg whole chicken, cut into 6 pieces
- 3 cups basmati rice
- 1/4 cup raisins
- Salt to taste
- Almonds, to garnish

- Make the kabsa spice mix

- Sauté the veggies and fry the spices
تم نسخ الرابطIn a large pan, heat oil over medium-high heat, add onions, ginger, garlic, and green chilies. Sauté until the onions turn golden brown, then add bay leaves, cardamom pods, and cinnamon stick, and fry for a minute. Stir in tomato purée, add ground nutmeg, ground black pepper, ground cumin, ground coriander, kabsa spice, and salt. Fry the spices for a minute. Add carrots and diced tomatoes, and stir for two minutes.
- Add and brown the chicken
تم نسخ الرابطAdd chicken cubes and chicken pieces. Brown chicken for about 30 minutes. Remove the chicken pieces from the pan.
- Add the rice and the chicken, again
تم نسخ الرابطAdd rice and raisins. Pour in 4 boiled cups of water, and season with salt. Bring it to a boil, then reduce the heat, put the chicken over the rice, cover with lid, and simmer for 10-15 minutes.
- Serve
