Celebrate Saudi National Day With This Chicken Kabsa Recipe

Chicken Kabsa will turn your dinner on Saudi National Day into a feast. This classic recipe from Saudi Arabia with spiced grilled chicken and flavorful rice is the ultimate choice for any special occasion in the Gulf country.

Kabsa Spice Mix

1/4 tsp ground cardamom
1/4 tsp ground white pepper
1/4 tsp saffron
1/4 tsp ground allspice
1/4 tsp dried whole lime powder
1/2 tsp ground cinnamon

Chicken Kabsa

2 tbsp butter
3 sliced onions
1 tbsp minced ginger
1 tbsp minced garlic
1 green chili
2 dried bay leaves
4 cardamom pods
1 cinnamon stick
2 tbsp tomato paste
1 pinch ground nutmeg
1/2 tsp ground black pepper
1/4 tsp ground cumin
1/2 tsp ground coriander
3 medium thinly sliced carrots
3 chopped tomatoes
2 chicken stock cubes
1 1/2 kg whole chicken, cut into 6 pieces
3 cups basmati rice
1/4 cup raisins
Salt to taste
Almonds, to garnish

  1. Make the kabsa spice mix

    combine together cardamom, white pepper, saffron, cinnamon, allspice, and lime powder in a bowl.
  2. Sauté the veggies and fry the spices

    In a large pan, heat oil over medium-high heat, add onions, ginger, garlic, and green chilies. Sauté until the onions turn golden brown, then add bay leaves, cardamom pods, and cinnamon stick, and fry for a minute. Stir in tomato purée, add ground nutmeg, ground black pepper, ground cumin, ground coriander, kabsa spice, and salt. Fry the spices for a minute. Add carrots and diced tomatoes, and stir for two minutes.
  3. Add and brown the chicken

    Add chicken cubes and chicken pieces. Brown chicken for about 30 minutes. Remove the chicken pieces from the pan.
  4. Add the rice and the chicken, again

    Add rice and raisins. Pour in 4 boiled cups of water, and season with salt. Bring it to a boil, then reduce the heat, put the chicken over the rice, cover with lid, and simmer for 10-15 minutes.
  5. Serve

    Serve your Chicken Kabsa while it is still hot and garnish it with almonds.
